Happy Thanksgiving everyone!! I hope you all had a safe and joyful holiday with everyone you love. We had a great day today and ate way to much yummy food. We started out going to Jeremys moms house. She lives 1/2 mile from us, so it was nice to have a short drive this year vs. 5 hours last year. She always makes a delicious spread and this year was no different. She made a new cheesecake dessert that was super delicious. After leaving her house we headed to my side of the family. My grandma isn’t doing so well…she has battled cancer for a while now and things aren’t looking so well for her. She looked amazing tonight. Her spirits are high and I’m so glad that we we’re able to make it to dinner. Most of the family was there and the food was awesome. (I love to eat….Thanksgiving is on top of my favorites list.) My step-mom Kim and sisters Chelsea and Lindsea cooked most of the food. It was totally different then what we had at Pam’s house, so it was nice to have a variety. It was so good. I will be hitting Kim up for a few of her recipes!! All in all we had a great day. I’m so glad I had the chance to hang out with my grandma. I really wanted to get some pictures with everyone, but we were all so busy talking that it totally slipped my mind. I enjoy spending time with that side of my family and really should do it more.

We have one more Thanksgiving tomorrow. I’m going to Grannys early to help her get it ready. I’m trying to really help this year, so eventually I can take over. 🙂 That’s exciting and scary to me all in one.

I’m so thankful for so much in my life. I have the best husband and kids that anyone could ever imagine. I love them so much. I have a roof over my head. I am thankful for that every time I take the dogs outside and I’m freezing!! We have great friends and family that I’m thankful we could enjoy lunch/dinner together today. I am so thankful for all our DCC contributors. We are getting better and better everyday and it has so much to do with these ladies. They are so talented and love what they do. I don’t know how we got so lucky finding them, but I know I am grateful for everything they do.

There’s so much more that I could ramble on about…but I’m so tired. I can barely keep my eyes open. Again, Happy Thanksgiving. Thank you to everyone who takes time to read my posts. I am also thankful for you. What are you most thankful for this year? I’d love to know.

Hello friends. I have a recipe for you tonight. It’s called Mom’s Best Apple Cake. I found this on Pinterest 9 days ago and I’ve made it twice already. Jerms loves it…which is great, because he’s not much of a sweets eater, so it’s gotta be pretty good! It’s really simple and I normally have everything to make this cake already in the kitchen. Here’s the website that was linked from Pinterest…Bunnys Oven! She has some really great recipes on her website, so make sure and check it out.

Here’s the recipe. You won’t believe how easy it is.

Mom’s Best Apple Cake.

Ingredients

Cake

  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 eggs
  • 1 ½ tsp. vanilla
  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  •  3 cups apples, peeled and diced

Topping

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup milk

 

Preheat oven to 350 degrees. Grease and flour a 9 x 13 baking dish.

Cake: In a large mixing bowl, beat together the oil, sugar, eggs, and vanilla. Add the flour, salt, and baking soda. Beat together until well-incorporated. Stir in the apples.
Pour the cake batter into the prepared baking dish. Bake for 55 – 60 minutes. Cool completely before adding the topping.

Topping: In a saucepan, combine the butter, brown sugar, and milk. Cook over medium heat, stirring constantly, until the mixture boils. Boil without stirring for 3 minutes. Remove from heat and immediately spread over the top of the cooled cake. Let sit for an hour prior to serving.

I like this cake…nothing more and nothing less. I did go through her comments and a lot of people added cinnamon and really liked it. I might try that sometime. I really enjoy making this, especially since Jerms is such a fan of it. It’s nice to have a favorite dessert I can whip up for him now.

I hope you will give this a try sometime. It would be a great cake to have around the holidays. Everyone likes apples, right?

Hello friends. What a wonderful Saturday.

*Here’s a few fun facts about my day*

Our weather was perfect.

I got my grocery shopping done.

Cleaned house a little bit.

Jerms did some woodworking in the garage.

Kids are off having fun with Mimi and Nannie.

Had a nice dinner with Jerms plus a few others.

Saw a friend from high school that I hadn’t seen in years.

Tried to FaceTime with the boys, but they are having too much fun to talk with mom!!

I still need to fold the last load of laundry. I hate folding laundry. Unless it’s towels….Those are quick and painless.

Spent good quality time with my granny.

No running today. Off until Monday. I am not complaining about that. I am enjoying the break.

I feel like a had a pretty successful day.

I still need to get some work done on the magazine.

What a day.

That’s all I’ve got.

Not a bad day and not a super excellent one either.

I’ve got a headache. I blame it on the bad food we ate for dinner. We have been eating so healthy lately. Today I gave in. I ate taco bell and I truly believe that’s why I’m feeling so yucky. Was it worth it? I think not.

Maybe I will learn my lesson.

Why is eating healthy so hard? I can conquer so many other ‘hard’ things, but eating healthy is such a job. It’s just an excuse…I already know it’s not any harder to eat healthy things compared to processed foods. But why do we make such excuses for ourselves? Convenience? Taste?

This day in age we are accustomed to eating bad. I don’t want my kids growing up that way. I was never taught how to eat healthy growing up. We ate whatever, whenever, and however much we wanted. I loved it. We had soda all day everyday.

And now my body is addicted to all this crap!!

“I want to be healthy. It’s not hard. I CAN do it.”

I’ve got to keep repeating that over and over. All day long.

I need to look into healthy recipes. Become a better cook…Keep running.

There are so many things I need to do…

WHERE DO I BEGIN?

Tomorrow is a new day. Back to eating right and running!

We are going to re-run week 2 and see how that goes.

I started a new book last week.

I thought it’d be a good idea to start reading it since we’re trying to make healthier decisions for our family. I’m only on chapter 5. (Don’t judge me….I’m a slow reader!) If you don’t know what the Paleo diet is let me give you a brief description.

‘The Paleo Diet is based upon eating wholesome, contemporary foods from the food groups our hunter-gatherer ancestors would have thrived on during the Paleolithic era, the time period from about 2.6 million years ago to the beginning of the agricultural revolution, about 10,000 years ago. These foods include fresh meats (preferably grass-produced or free-ranging beef, pork, lamb, poultry, and game meat, if you can get it), fish, seafood, fresh fruits, vegetables, seeds, nuts, and healthful oils (olive, coconut, avocado, macadamia, walnut and flaxseed). Dairy products, cereal grains, legumes, refined sugars and processed foods were not part of our ancestral menu.’ (I found this here)

Any of my followers Paleo lovers? I’d really love to hear your input on the subject.

I think we are going to try it. It may seem crazy to most people to switch up your diet completely. We were vegetarians for 2 years, so I know we can do it. There were things we loved about being vegetarian and things I don’t miss at all. Tofu is one of them! I will say I never felt better, my weight was at a comfortable number, and we rarely ever got sick. But the truth is I like meat. I missed it.

I think the Paleo diet could really work for us. I’m excited to kept reading and learn more about it.
